2. Irish Colcannon Another classic Irish dish that has seen many American spin-offs over the years, but we wanted to stick to tradition as best as possible. This recipe does require a bit more work and ingredients than the soda bread, however, you can trust us, it's well worth every bit of effort. The more effort and love you pour into this one, the better it gets. 1 pound russet potatoes, peeled and cut into 1/2-inch chunks 1 pound red potatoes, cut into 1/2-inch chunks 1 teaspoon kosher salt, divided 6 tablespoons unsalted butter 1 small head savoy cabbage (about 1 pound), cored and shredded 4 medium scallions, white and green parts thinly sliced and separated 1/2 teaspoon freshly ground black pepper 1/2 cup whole milk 1/4 cup low-sodium chicken broth You can find full detailed instructions here: https://www.thekitchn.com/how-to-make-colcannon-irish-potatoes-and-cabbage-242195
